What you'll need:
1/3 c cooked duck, cut into small pieces
1 clove garlic, minced
1/2 c chopped spinach
1/3 c monterrey jack cheese
Salt and pepper to taste
1 egg, well beaten
6 "baby bella" mushroom caps
In a medium bowl, mix duck and garlic
Add spinach, cheese and salt and pepper
Add in egg and mix well. Wash mushrooms well. Scoop out inside of caps. This can be tricky. My secret? Use a grapefruit spoon! Just be careful not to tear through the cap :)
Scoop in 1/8 c of the stuffing into each cap
Bake at 375 for 25 minutes.
I'm not really a huge fan of mushrooms. Odd that I would make stuffed mushroom, right? It's no secret I have a little OCD. I like the taste of mushrooms. I just don't like the look and feel of the stuff under the cap. I don't know what it's called, or if there is even a name for it. But the great part about stuffed mushrooms is you scoop all that out!
I've had a blast trying out all these new recipes. I've been experimenting with new foods and found some new favorites. Big thanks to Ott,A and Maple Leaf Farms!

These look really good - I love stuffed mushrooms! That must of been one big duck! I totally think you should win this challange!
Such an intriguing flavor combination! I'll have to try it out the next time I have some leftover duck. Hmm..there's a duck in the freezer that may need to be thawed out for a roast duck dinner this week. Thanks for sharing.
Oh looks yummy and am hungry now. A new follower from Meet & Follow Sunday. See you.
They look tasty. FYI, the part you don't like are the gills of the mushroom.

Oh gosh, I am with you on being OCD about food. There are so many things I'm picky about solely because of texture. My husband thinks I'm nuts. Stuffed mushrooms are always so tasty though!
Love the baby bella mushrooms! This looks like a great snack at girl's night!!

What a great recipe for stuffed mushrooms! They look wonderful! I'm not a big duck fan but I would definitely eat these. I'm guessing if I tried them at home that I could substitute chicken, which we eat quite regularly. Thanks for sharing your recipe! Happy Tuesday, Candace
Interesting combinations and they're all my favorite! I gotta try this soon!
I'm having the very first GIVEAWAY on my blog. Please stop by to submit an entry. Best of luck!
